HAPPY

We aren’t out and about, and there isn’t quite as much material to chose from, but I still have favorites.

not my coworkers, although my coworkers are all wonderful, but I’m talking about my customers.  Wonderful people whom I call friend: Debbie, Gwen, Judy, and Diane.  You have my email and I’m here for you.  I’ll stay overtime if you need me!

Favorite # THREE

(Low Carb)

Sausage Biscuits

These sausage biscuits will make you gain weight even in ketosis.

Ingredients

  • 1 lb Sausage
  • 1.5 cups almond flour
  • 1 tbsp coconut flour
  • 1/4 cup sour cream
  • 1 egg
  • 2 tbsp butter
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup shredded cheddar cheese

Instructions

  • Heat a frying pan over medium heat. Remove the casings from the sausage and chop. Add the sausage to the pan and cook until browned, breaking into small pieces as it cooks.
  • Preheat oven to 350°. Spray muffin tin with cooking spray.
  • Combine the flours, sour cream, egg, butter, baking powder, and salt and mix until smooth. Fold in 1 cup of the cheddar and the cooked sausage.
  • Divide the dough between the prepared muffin tins.
  • Bake for 25-30 minutes or until golden brown.

Lemmy’s Castle

Last night while I was on the treadmill, Stephanie sent me a request for help.  It appears that she has been fortunate enough to enjoy time with Super Mario World.  In my past life this was an extreme time waster, but it was fun.  I enjoyed it, my kids enjoyed it, my sister and her kids enjoyed it.  I hope she doesn’t mind, but this was a wonderful memory.

Quarantine Week Three

April 19, 2020

Many people began social distancing early in March.  For me it was March 26th.  This is the third week of COVID19 lock-down.  I’m still working Monday through Friday, LB is still working Monday through Friday.  We just sit at our computers and solve people’s problems.  But that is proprietary, so I won’t be able to share.

Here are some highlights of our week.

Monday Monday

I’m not sure why this is a highlight, but on Monday rain made another an appearance.  It always makes me sad when it rains, and somehow seems to sap my energy.  And just like the guy whose feet are too big for his bed, nothing seems to fit…

Nevertheless, rain is necessary and with the rain, very soon my amaryllis will no longer look like small green aliens

Although it started poorly, quarantine week three was epic

Take-out Tuesday

Today we ventured out to pick up a prescription from CVS and at the last minute decided it would be a great day to treat ourselves to fajitas!  Life is too short to deny ourselves a few simple pleasures.  Knowing that Salsas is ready to accommodate, we called in an order of fajitas for pickup.  That take out treat contained more chips than my carb-free life is supposed to allow.  But alas, I succumbed and devoured the chips and salsa.

Tomorrow will be a new beginning.

Whines-day Wednesday

Who’s WHINING?

Today the President sent me a check for $1200.

Thursday

Is that sunshine I see?  Did it FINALLY stop raining???

The yard is a lake, but my amaryllis were very satisfied with this week’s rain.

That other plant isn’t looking too good.

Quarantine Week Two

April 12, 2020

Quarantine Week TWO

Still working every day.

It seems that I’m causing myself a new injury on a regular basis.

While cleaning, I dropped a shower caddy causing a razor to fall into my leg and leave me with a gash.  And while giving myself a mini-pedicure, I nearly lost the nail on my little toe.  I tried to take off my finger while slicing limes.

Yesterday was the end of week two.  Aside from excessive injury, I am completely fine with the situation.  Walmart delivers my groceries and there is no reason to go to the gas station, or anywhere else.

There is occasional entertainment from my own yard.

Whether we’re watching acrobatic squirrels

Or sitting by the pool at sunset.

During quarantine week TWO comes Passover, Good Friday, and Easter Sunday.

The word unprecedented has been used over and over again to describe this time of isolation, but it is the only word that comes to mind when attempting to describe Easter Sunday 2020.  It was nothing in comparison to Easter 2019.

Although generally healthy, some of our family have been deemed high risk and therefore it is important to comply with the recommendations from those in authority.  Nevertheless, each member of my family regards this day as significant and each have set it aside as the Lord’s day.

Although we are not together at this time, we are always together in spirit.

Friday Favorites

Even though I’m working from home, Friday is still my favorite day!  It is the day I look forward to more than any other.  Today is my first Friday Favorites post in two weeks.  My post from last week is still in my drafts folder.  Maybe I’ll get back to it later.  THIS FRIDAY I was determined to submit my five favorites for the week.

I love the story of Joseph and this 1995 mini series with Ben Kingsley and Paul Mercurio is my favorite!  LB doesn’t know it yet, but he is going to watch it with me this weekend.

Favorite # TWO

April’s Supermoon

According to the Farmer’s Almanac, there are 13 full moons in 2020.  April’s is supposedly the pink moon, named for moss pink, or wild ground phlox, some of the first flowers that appear in spring.

The moon was full on April 7th and LB decided we would go for a drive, just to look at it.  More than seeing the moon, I appreciated just going for a drive.

QUARANTINED!

April 5, 2020

Never would I have imagined that this would be my last day at the office!

On Thursday March 26th, we took inventory, boxed up my office equipment and packed it in my car. Two monitors, a “thin client” PC, multiple cables, and a new cell phone.

I drove home from the office that afternoon and I haven’t been back.

I’m all broken up about it.I still can’t believe I have the OPPORTUNITY to do my job from home.

Right away LB moved his belongings out of the home office and I moved mine in.

Quarantine Day ONE

I got up, got dressed, made coffee, walked into my office, and got to work.  At lunch time I sat out by the pool for 20 minutes of vitamin D, then went back to my hot pink office to work.  At 4:30 I logged off and started my weekend.

Friday evening was dedicated to LB and his favorite little pizzas.

Quarantine Week ONE

After spending one full week of  working from home, I’ve found that 1. I sleep more.  2. I eat less 3. I don’t say bad words.  4. I don’t care how I dress.

I never get lonely.He never leaves my side.

I’ve also found that my workload has become heavier.   Just recently my team made an adjustment down from six to four members.  This week there are three of us. Initially I thought it had something to do with the fact that we are one man down.  Now I think that is only part of it.

My theory is that the agents who are escalating issues aren’t concerned with the ridiculousness of their ticket submissions.

Nevertheless, I press on because I am ESSENTIAL.  Anyway that’s what I’ve heard.

 

In my off time I have tried to finish assignments for the class I’m trying to complete, keep up with treadmill time, and keep the house clean.

I’ve done a lot of cooking and experimenting with keto recipes.  Lots of cheese in keto recipes.

Also I’ve done some gardening and painted the laundry room.  Time is well managed and not wasted.

I don’t miss getting up at 5:30 AM and I don’t miss leaving my house an hour early to avoid traffic mishaps and I don’t miss much of anything.  Except shopping.

Today is Friday… the FIRST FRIDAY of APRIL 2020!

And as always [whether I share them or not] I have Favorites!

Favorite # ONE

The Original Coffee Mate

I’m not so concerned about the recent run on toilet paper, I’m more concerned about the shortage of these

We finally found some.

You don’t realize how nice little things [like your favorite coffee creamer] are until you can’t find them!

Favorite # TWO

Keto Frosty

I made this recipe earlier this week, and divided it into four parts.

Ingredients

  • 1 cup heavy whipping cream
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 8 drops liquid stevia (or sweetener of your choice)

Instructions

  1. Use a hand mixer to beat the heavy cream.
  2. Add the remaining ingredients, and blend together until the mixture becomes the consistency of frosting.
  3. Freeze for about 30 minutes.

 

It is a nice treat when following a keto diet, but it is not low calorie, and tastes NOTHING LIKE A WENDY’S FROSTY!

My Office Assistant

Elvis has been keeping me straight.

If I forget to open a closet door, he’s there to remind me.  Multiple times.

On Sunday I commissioned a piece of artwork featuring my furry office assistant.

Lydia was taking requests.  I asked that she create a work of art featuring Elvis.  Because I frequently find him there, I suggested he be looking out the window at the little birds stopping to have breakfast at the bird feeder.  I mentioned that she might want to include a squirrel, since they typically scurry about in the same area.

Emily said that Lydia took some artistic liberties.

She painted her cat O’Malley and Elvis playing together.

I’m looking forward to hanging it on my wall.

Favorite # FIVE

Story Time

On Friday Richard Face timed me then handed the phone over to the baby girls.

First Rory, who reminded me that her favorite word is “no”, and tired of Glammy fairly quickly.

Then Lydia, who ran away to the playroom and commenced to read five books to Glammy.

It was the best story time ever!
