What We’re Eating This Week

I’m practicing low carb this week.

LB is enjoying dessert every night.

What I’m Loving

Well it must be my new yellow jacket because I have worn it 3 times this week.

What We’ve Been Up To

Mandatory Overtime for me and Hurricane Restoration Overtime for LB.  My overtime has been continual since July… needs of the business and all that.  It appears to be the new normal and may go on forever.

  LB thinks his will be wrapping up this week.

 What I’m Dreading

There is nothing dreadful on the horizon [that I am aware of] with the exception of going to work.

What I’m Working On

My attitude about going to work.

No seriously… why would I work on that?

I’m working on finishing up my Intro to Research class! This is the last week and a new one begins on Friday.

Three credits down… Fifteen to go!

I have completed the Publication Manual of the American Psychological Association® (APA), 6th Edition and I am currently reading chapter 15 of the textbook Introduction to Research: Less Fright, More Insight: Designed Specifically for Ray Crawford, Ph.D. at Liberty University, 2nd Edition.

And getting smarter by the minute.

What I’m Watching/Listening To

not really watching, but glancing occasionally, because it is funny.

What I’m Wearing

Today I’m wearing red pants, floral top, and NEW YELLOW UTILITY JACKET from LOFT!

not the best picture (I was leaving for work and having a hard time showing happiness) but I LOVE my jacket.

What I’m Doing This Weekend

First and most important, I’m sleeping late on Saturday morning and Sunday morning.  On Sunday Afternoon LB and I will be attending a party for one of the members of his work group.

What I’m Looking Forward to Next Month

Next month brings two birthdays

Stephanie

my firstborn

and

Richard

my baby!

In addition there is an upcoming holiday (Thanksgiving), and several vacation days.

I’m especially looking forward to the vacation days.

I’ll probably need to start getting serious about Christmas shopping too!

National Dessert Day

October 14th has been declared

National Dessert Day!

The NationalDayCalendar suggests: observe National Dessert Day by going out to a dessert shop or restaurant and indulging in a sweet treat.  Post photos on social media using #NationalDessertDay

It must have been women’s intuition because I set into dessert making mode before I knew about the celebratory day.

I’d lost that lovin’ feeling for the apples that I had been taking to work for lunch

and decided I would make them into something LB couldn’t resist.

This is an EASY dessert recipe and there’s no easier way to make something LB cannot resist than creating dessert!

Apple Dump Cake

Aside from pumpkin, apple is the flavor of the season. While baking, the fragrance of apples and cinnamon wafted through the kitchen creating an atmosphere of autumn.

This dessert is delicious served warm and topped with cool whip!

Apple Dump Cake

  • Servings: 8-10
  • Time: 60 mins
  • Difficulty: easy
  • Print
Ingredients
6 cups chopped apples
1/2 cup chopped walnuts (optional)
1/2 cup sugar
1 1/2 teaspoons ground cinnamon
1 box yellow cake mix
3/4 cup melted butter
Directions
Heat oven to 350°F.
Spray 13×9-inch glass baking dish with cooking spray.
In baking dish, mix chopped apples, walnuts, sugar and cinnamon. Spread evenly in pan. Top with dry cake mix;  shake to distribute evenly. Pour melted butter over top, covering as much of the top with butter as possible.
Bake 45 to 50 minutes or until top is light golden brown and bubbly around the edges.
Cool 15 about minutes before serving.

It is apparent that the apple dessert is not going to last all week.

Friday Favorites

What a ridiculous week it has been!

I always try to keep my posts positive, but let me take a moment to rant about

TRAFFIC

Twice this week I have barely made it to work on time due to traffic accidents!

On Wednesday the highway became a parking lot.

On Thursday my WAZE app rerouted me onto a 2nd choice route that included train tracks.

Yep, I was stopped by a train.

Mandatory overtime has resumed.  Along with my peers, I am working an additional hour every day.  Blogging has been pushed to the back burner as my brain has been focused on a synthesis paper that is due for submission by midnight on Monday.

Guess what I’ll be doing this weekend???

Also I need about 13 hours of  uninterrupted sleep.

I make little pizzas every Friday for LB, however because Thursday was National Sausage Pizza Day, I decided to surprise him with little sausage pizzas.

It was a good decision!

He’s still talking about it.

Fall 2.0

Happy October!

It is that time again!

I meant to post this TBB ASKS yesterday, but instead worked on an assignment.  Have to keep up with that class!

So here are my answers to TBB’s October Fall 2.0.

Favorite Fall Color?

This color.

Apple Cider HOT or COLD?

Hot

I have never tried cold apple cider.

Is that even a thing?

 

Caramel Apple Yes or No?

They are a big mess, but I might be tempted.

Pumpkin Donut or Apple Cider Donut?

Sadly, I have never tasted a pumpkin donut or an apple cider donut.

But I do recall having an apple fritter from the Pantry Pride bakery when I was a little girl.  THAT was delicious!

Long or Short Cardigan?

Long cardigans are preferred, but I have both styles in my closet

Favorite Football or Fall Party Food?

WINGS!

This post is making me hungry.

Orange or White Pumpkins?

For some reason I gravitate to the orange pumpkin.Orange just feels right.

Hayride or Bonfire?

Bonfire!

Bonfires are fun!  Hayrides not so much.

Favorite Fall Baked Good?

There are so many to choose from!

I would probably have to say that pecan pie bars are my favoriteand always a hit!

Most Anticipated Fall Activity?

Just like the fall baked goods… so many to choose from!   Football parties with LB, Wayne & Laurie’s Halloween party, the Sunday before Thanksgiving dinner with LB, Mama, and my kids!  All of my kids were born in the fall, so there are birthdays to celebrate.

I love all of our fall traditions!

But I think I will have to say that my fall trip with LB to see the leaves is what is Most Anticipated.

I am so looking forward to taking a road trip, enjoying the scenery, eating out, shopping at boutiques…

and I can’t wait to be off work for several, peaceful, happy days!

The last of the Limes

Now that pumpkin is the star of the show, it is necessary to use the bowl of limes.

It was a Lime Bundt Cake recipe that got me started. 

It took about eight limes to make this cake.

And I’m still looking forward to the LAST of the limes!

 

Favorite # FIVE

On Tuesday the company shared the glorious news that there is [once again] an overtime mandate for all employees.  Boy was I mad.  I appreciate the slightly inflated paycheck, but I do not appreciate leaving the office an hour later and spending an extra bit of time in rush hour traffic.

My attitude is in check.  I’ve decided to grit my teeth and bear it.

My resolve has reminded me of a story I once heard:

A mother was driving to school one day, and her youngest child was standing in the seat beside her. Realizing the danger, she said to him, “Sit down, dear, I may have to stop suddenly and you’ll be thrown against the windshield.”

“No!” the little boy refused.

“Please sit down, dear, I don’t want you to get hurt,” the mother insisted.

“No!” came the stubborn reply.

Finally, she reached over and pulled him down. He sat there sullenly for a moment, then said, “I may be sitting down on the outside, but I’m standing up on the inside.”

The Tablecloth of Grace

Several years ago, a good friend, Cathy W., introduced me to a radio show that I began tuning into regularly.  Insight for Living (insight.org).

I will never forget one particular story about grace.

Recently I found the story (here) and shared it with LB.  I thought it would be nice to share it on my blog as well.

The Tablecloth of Grace

Shortly after David ascended Israel’s throne, he made good on a promise.

He had given Jonathan his word that he would demonstrate kindness to Jonathan’s family forever (see 1 Samuel 20). Once David became king, he could easily have forgotten that promise. Certainly, no one would have forced the king to keep it.

But David’s “yes” meant “yes.”

After the deaths of Jonathan and his father, King Saul, David remembered his promise, which prompted him to ask, “Is there yet anyone left of the house of Saul, that I may show him kindness for Jonathan’s sake?” As it turned out, the answer was “yes.”

Ziba, David’s servant, said, “There is still a son of Jonathan who is crippled in both feet” (2 Sam. 9:1–3, NASB).

Without hesitation, David sent for Jonathan’s son, whose name was Mephibosheth. When the young man arrived, he bowed trembling. In ancient days when a new king from a new dynasty took the throne, it wasn’t uncommon for him to destroy every member of the former royal family. That explains the young man’s terror. Being Saul’s grandson meant he was as good as dead! But, of course, he knew nothing of David’s promise to show kindness to his father’s family. How shocked he must have been when King David reassured him,

“Do not fear, for I will surely show kindness to you for the sake of your father Jonathan, and will restore to you all the land of your grandfather Saul; and you shall eat at my table regularly” (v. 7).

Filled with a mixture of amazement and gratitude, Mephibosheth bowed yet again, asking,

“What is your servant that you should regard a dead dog like me?” (v. 8).

David did far more than spare his life. He made sure that everything that had belonged to Saul and his family now belonged to the young man who was not only undeserving of such favor, but he was also crippled in both feet. In addition, the king promised him that from then on he would have a place at the king’s table, regularly eating his meals with others in the king’s family (v. 10).

What a story of grace—God’s unmerited favor!

With a little imagination, we can picture a familiar scene in the king’s royal residence. Gold and silver fixtures held the flaming torches that lined the palace walls. Lofty, hand-carved wooden ceilings crowned each spacious room, including the banquet hall where David and his family gathered for their evening meals.

In one chair sat tanned, handsome Absalom with his long, raven-black locks of hair.

Next to him sat his beautiful sister, Tamar.

Across from her sat the young and brilliant Solomon.

It’s suppertime, and the call has gone out to all in the family to gather around the table. As David the dad scans the room to make sure all the kids are present, he notices that one is missing.

It isn’t long before everyone can hear a sound they have become accustomed to by now.

Finally, the young man appears and slowly shuffles to his place.

It’s Mephibosheth, of course, seated now at the king’s table alongside the other members of the king’s family.

Once seated, the tablecloth of grace covers his feet.

We are reassured of the king’s grace as we read, “Mephibosheth ate at David’s table as one of the king’s sons” (v. 11).

Although Mephibosheth had nothing to offer David, the king lavished on him great honor. David made no distinction between Absalom and Tamar and Solomon and Mephibosheth. When grace abounds, that’s what happens. Favor is extended to the undeserving, which cannot be earned or repaid.

No wonder we call it amazing!

Favorite # ONE

A Little Goat

On my way home from work, I drive past a house with a little goat standing in the front yard.  Once or twice he has managed to wander out onto the sidewalk.  Each time I drive past, I look for the little goat hoping he hasn’t managed to find his way out of the yard again.  It makes me happy to see him safe in his yard.

Why is a little goat being listed as one of my Friday favorites?

Because anything that brings a smile to my face when

Favorite # TWO

Last Minute Plans

It was hurricane Irma that interfered with the Shrimp and Grits Festival last year, causing it to be cancelled and rescheduled as Shrimpmas in December.

This year the festival wasn’t cancelled, but LB had to cancel our reservations and plans to spend the weekend in Jekyll Island, GA, due to hurricane Florence, because he was needed for hurricane restoration at work.

HOWEVER

It turned out that there was nothing that could be done on Saturday, so we took off!

We grabbed the chairs and headed to the Wild Georgia Shrimp & Grits Festival, stopping only for a diet lemonade from Chick-fil-A.

I’m okay with that.

 

Favorite # THREE

The End of Summer

Although I am not happy to see summer go, I like to think that the rain is going to stop, which makes me happy.  Many can’t bear the end of summer, but I want to share that according to the Huffington Post, there are
