LB’s Birthday Weekend

LB’s birthday is on January 26th.
January 26th happened on a Saturday this year, so I was able to be home with him and start his special day with  a special BREAKFAST.
Pineapple Upside Down Pancakes were on the menu.  Courtesy of Mrs. Butterworth’s and a can of Dole Sliced Pineapple!He loved his pancakes!
And he loved opening Birthday Gifts!He looks SMASHING in his new jacket…
And is very excited about his new GOOGLE Home Mini!The Birthday Boy spent his day playing with ‘Hey Google’.
I assumed we would go out for dinner and live music later that evening, but he didn’t want to venture out in the cold.  He requested homemade pizza for dinner.
And he chose the German Chocolate Tres Leches Cake from a list of cakes that “you MUST TRY”.
It is delicious!

I’ve included the recipe courtesy of Taste of Home so we can make it again:

German Chocolate Tres Leches Cake

  • Servings: 16
  • Difficulty: easy
  • Print

Ingredients

  • 1 package chocolate cake mix
  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (12 ounces) evaporated milk
  • 1-1/2 cups heavy whipping cream, divided
  • 1/4 cup rum
  • 3 tablespoons confectioners’ sugar
  • 1/2 cup sweetened shredded coconut, toasted
  • 1/2 cup chopped pecans, toasted

Directions

  • Preheat oven to 350°. Prepare and bake cake mix according to package directions, using a 13×9-in. baking pan. Cool on a wire rack.
  • Meanwhile, in a large bowl, whisk milks, 1/2 cup cream and rum. With a wooden skewer, poke holes in cake about 1/2 in. apart. Slowly pour milk mixture over cake, allowing mixture to absorb into cake. Let stand 30 minutes. Refrigerate, covered, 8 hours or overnight.
  • In a small bowl, beat remaining cream until it begins to thicken. Add confectioners’ sugar; beat until stiff peaks form. Spread over top of cake. Sprinkle with coconut and pecans.

Favorite # ONE

On Sunday evening, LB and I headed to the Florida Theater to see the original boy band…

Frankie Valli and the Four Seasons

although these Four Seasons weren’t the original boys, they did an excellent job backing Frankie and entertaining with their fancy dance moves.

We heard hits like “Can’t Take My Eyes Off of You”, “Rag Doll”, “Walk Like a Man”, and “Sherry”.

Frankie Valli is 84 years old.  I was impressed with his performance and I’m happy to have had the experience.

Favorite # TWO

Turkey Cheddar Bacon Sliders

Because I have to keep my LB fed!

This is how I made them:

Turkey Cheddar Bacon Sliders

  • Servings: 16
  • Difficulty: easy
  • Print

Ingredients

  • 1 (16 ounce) package King Hawaiian Sweet Rolls
  • Dijon Mustard
  • Shredded Sharp Cheddar Cheese
  • Cooked Bacon
  • 1 (12 ounce) package turkey deli meat
  • 2 Tbsp. butter
  • 1/8 tsp dried parsley

Directions

Preheat your oven to 350 degrees.

In a package of King’s Hawaiian Sweet Rolls, there should be 16 rolls.  Without separating the rolls, take a sharp serrated knife and cut them in half. Cutting them this way speeds up the assembly process.

Spread the Dijon mustard along the inside of both the top and bottom halves of the rolls.

Layer turkey evenly over the rolls.

Layer cheddar cheese over the turkey.

Layer slices of bacon over the cheese.

Carefully place the top half of the rolls back over the top.

Spray a deep 9×9 inch pan with cooking spray and carefully place the sliders into it.

Melt 1-2 Tbsp of butter and mix with 1/8 tsp dried parsley. Brush it over the rolls.

Cover with aluminum foil and bake for 20-25 minutes, or until the cheese has melted and the rolls are nice and toasty.

Use a serrated knife to cut the rolls apart. Serve warm from the oven!

My LOFT Outlet Finds

Although it hasn’t even been a month since Christmas… I went on a shopping spree.

It is no secret that I love Ann Taylor LOFT and the LOFT Outlet.  If you log onto outlet.loft.com you will find different specials than you’ll see at loft.com or in the store.

This was the first item in my shopping cart.  The color description is “fig” and I like how it is paired with the blue/gray pants, but it was the price that grabbed my attention.  With the code SOGOOD, my price was $7.99.

I have an eye for a good deal.  These corduroy pants were too good to pass up.  My target item was blouses, but I had to get the pants when I found this

The blouse appears to be very similar to the floral long sleeve tee, but has a completely different look when worn.

My Niece

Perfect Attendance Party

In the inbound call center world, it is a VERY BIG DEAL to have perfects attendance.  So much so, the company throws a party for the individuals who are able to make it an entire year without using a “sick” day.  To celebrate these exceptional folks, the company will throw a party for them.  This year the party included Jimmy Johns subs and a movie,

Central Intelligence.  The movie was great!  The Buffalo Chicken sub came home with me; LB and I will sample it this weekend.

Book(s) you have read multiple times

This Present Darkness by Frank E. Peretti.  The book is Frank E. Peretti’s first published novel for adults.

I’ve read it three times.  This is a big deal for me.

Favorite book/author of all time

This Present Darkness is the story of the town of Ashton which is on the verge of appropriation by a New World Order.  This New Age corporation is planning to unleash its evil plan beginning with the small town.  In the story are two characters who dare to oppose the corporation. Marshall Hogan is the owner of a newspaper and Henry Busche is the pastor of a small church in town.  When both are arrested on false charges they meet in jail.  Each of these men discover that they are not only at odds with the large and powerful corporation, but are also in the midst of great spiritual warfare.  Fighting alongside the protagonists are spiritual beings, Angels who are portrayed as unique individuals with endearing personalities, interact with the story’s physical characters, while battling the demons who attempt to destroy them.

If this book sounds like it is sensational, that’s because it is.

I used to be addicted to Survivor, but never have I binged on the series.  The only time I have binged on a TV show is while I’m on the treadmill where I will watch recorded episodes of Today with Kathie Lee Gifford and Hoda Kotb.

The Bee Gees.  At one time it was Barry Manilow.  When I finally saw him I was [sadly] disappointed.

If I could go back in time, I would’ve seen the Bee Gees in concert while I had the chance.  Now I have my mind set on seeing the Backstreet Boys.  I hope we can make that happen.

Three Kings’ Day

With the new year bringing a call to get into shape and embrace good health, all of the goodies in my house were expelled.

By the first weekend in January, LB was looking for his 9PM dessert.

Yeah I got nothin’.

So when I found out that there was a CAKE made especially for a celebration on January 6th, I was in!

a/k/a Epiphany

a/k/a Día de Los Reyes

In Mexico, Día de Los Reyes  is a holiday celebrated on January 6 to honor the Three Wise Men.  The day the Three Wise Men gave gifts to Jesus Christ is the day that closes the Christmas festivities.  During Día de Los Reyes, Mexicans serve Rosca de Reyes, also known as

Three Kings’ Cake

“Rosca” means wreath and “Reyes” means kings. The Rosca de Reyes has an oval shape to symbolize a crown and has a small doll inside which represents baby Jesus. The doll figure symbolizes the hiding of the infant Jesus from King Herod’s troops. Traditionally roscas are adorned with dried and candied fruits to symbolize the many jewels that a crown would have.

My version of the Rosca de Reyes was made from a box mix, baked in a bundt pan, and decorated with icing, maraschino cherries, slivered almonds, and some leftover green chocolate chips.  It looks a bit odd, but tastes as good as any yellow box cake you’ve ever made.  Also, I did not include any trinkets in my cake.LB didn’t mind.

 

Here is a fun tidbit of information:

For those of us in the U.S., Christmas is over, but for those in Latin America and Spain, the majority of gifts are coming not from Santa Claus, but rather from the Three Kings.  Before going to bed, the children place their old shoes with a wish list on top for the Three Kings.  The next morning, the shoes are filled with toys and gifts from the Three Kings.

We enjoyed a stay at the very nice Westin Hotel.

Later that evening we participated in a party at the Jekyll Island Club.  The party was catered by the Jekyll Island Resort and there was more food than I could believe.There was a band, a dance floor, and plenty of strange people.Happy New Year!Its gonna be a good one!

For me new year’s resolutions happen monthly.  I’m always starting something new.  Recently I have found several schedules that I pinned to my Healthy Me board on Pinterest.  These are helpful to aid in staying on track in an effort to reach goals.  For example, there’s the 30 day De-Clutter Challenge, the 21 day Mental Wellness Challenge, and my favorite…
