Mother’s Day

I had no idea that I would enjoy a tea party as much as I did!

My sister planned a Mother’s Day gathering for the ladies in our family.

 

On Sunday afternoon, we met at Mama’s house, for the first time in MANY weeks.

The table was beautifully decorated with a place for everyone.

Set at each place was a pair of Mickey Mouse ears to wear.

Each place was chosen (or chosen for us) based on matching headdress color (your mouse ears much match, or at least coordinate with your outfit).We donned our ears and posed for the group picture.

No doubt, we were meant to be together!

The MENU

was exceptional.

There was avocado toast…

charcuterie at its finest

on a dachshund cheese board, of course

a cheese laden salad

and

British scones with clotted cream and assorted preserves.  Prior to today I had never tasted British scones or clotted cream, but I am now a convert.

~

Dessert included an assortment of cookies

including a family favorite…

Raspberry Almond Shortbread.

Then the

pièce de ré·sis·tance

 

a strawberry lime cheesecake trifle…

which looked better than it tasted (I’m allowed to say that because I made it).

As I mentioned previously, I had no idea I would enjoy a tea party as much as I did.  I think it is because I love these people so much.

Picture time was a bit of a circus, but quite entertaining.

Chynna is a trooper, managing babies of every shape and size.

I’m impressed!

Quarantine week SIX

Welcome to another edition of the

Quarantine Chronicles

This week I was ‘telling’ a coworker that my job has gone from the worst ever to the best ever…

simply by moving my office.

If I had to categorize week six of the COVID 19 Quarantine I would file it under

PROJECTS

1. College Courses

This week I managed to complete another course.

This course brought me great stress, because I had to step out of my comfort zone and post VLOGs on YouTube to share with my virtual classmates.

I’ll spare you from the links to my course VLOGs.

Completing this course brings me one step closer the end of my college career.  I’ll be retiring later this year.

As for my full time job, I’ll probably never make it to retirement.

At home, not a whole lot has changed…

with the exception that there are fewer trees in the neighborhood, everything has remained unchanged.

To make up for the neighborhood aTREEocity, I went out early this week and planted a baby tree.

2. Tree Planting

It was an oak tree that I pulled up out of my landscape shrubbery and transplanted in the front yard in an attempt to replenish the trees that were lost.

Sadly, it appears that the small tree may not make it.

I’ll keep you posted.

I’ve tried to use my time at home wisely to get organized.

3. Kitchen Pantry Organization

I emulate my Mama when it comes to tidiness and organization.

Except in my pantry.

This is the official “before” photo.

I’ve ordered containers and labels.  The Container Store has not shipped the items that I’ve purchased.  Perhaps they are out of the office due to COVID 19 quarantine, I’m not sure.  They have not been clear in the email response that I received.

There will be follow up.

4. POSHMARK

This week I logged into my Poshmark account and for the first time, I posted items for sale

Never worn and listed at very low cost.

Perhaps they will sell.  If not, these may be found in a thrift store.

~

5. Shredding

While cleaning out the home office hutch, I found FIVE shoe boxes filled with items to be shredded.  I have taken it upon myself to personally shred each piece.  There are two boxes left.

Quarantine Week FIVE

The 5th week of our quarantine was uneventful and as LB described “I think we’re getting used to it”.  With the exception of missing my family gatherings, I could continue this way indefinitely.

From the beginning of this new way of life, I have NOT lived in sweat pants.

I start my day with a shower, then get dressed, make up the bed, grab a cup of GOOD coffee, and walk around the corner to my home office.

Which, by the way, is pretty cute.

Also, a bad hair day is not an issue and I can wear whatever I want.

My Office

used to be Amanda’s bedroom.

After she moved I converted it to look like the office I had while I was working for Liberty Furniture (2003-2010).

It is painted white and Exuberant Pink with black accents including a Thomasville partners desk and hutch.

Before last Tuesday it was an LB catch-all.  Much tidier now.

While I’m seated at my desk, this is

My View…

It may not be much, but it is much more personal than my office in Fleming Island.

I have a couple of aluminum ceiling tiles that are framed (a gift from Stephanie), a collage filled with reminders of a biking adventure with LB at Jekyll Island, An original piece of artwork featuring a quactopus (created by Stephanie).

A baby degree

(AA from Florida Community College at Jacksonville),

Which I will be replacing with a big girl degree very soon.

And a large black bulletin board filled with memorabilia.

The bulletin board came home with me when I left my Liberty Furniture life in 2010 (because it was mine anyway).

There are photos of my three “babies”

and a WalMart clock that LB felt was necessary.

I have a drawing of “Aunt Kim” and a drawing of a giraffe by my niece Sydney Rigdon.

The statement “Unburdened by the rigors of coherent thought” goes along with my pretend blonde persona.

Included is a photo that was screenshot from TV when we visited the TODAY Show in February 2009.

Quarantine Week FOUR

Has it really been FOUR weeks since we’ve been on lock-down?  FOUR WHOLE WEEKS since my office has effectively been closed?

If it wasn’t for the fact that everything else is closed I’d think I was in Heaven!

This has been an interesting week.

Last Saturday LB and I “attended” a funeral via Zoom.

LB’s cousin Julie died last week and was buried on Saturday in Merritt Island Florida.  Because of social distancing regulations, only ten people were permitted to be there.

It was a sweet graveside service preceded by a sweet video of photos showing highlights of Julie’s life.  It was an experience I never imagined I would have.

Sunday was a quiet and relaxing day.

LB and I watched Butch Cassidy and the Sundance Kid.

Any movie with Paul Newman and Robert Redford reminds me of my daddy.And especially Robert Redford.

Then Monday it was back to work.

The week began with system equipment problems and would eventually culminate in a call to tech support for assistance with internet connectivity trouble.  This was an entirely different trouble, but still part of a technologically challenged week.  As of workweek end, we have a new router to install.

On Tuesday LB and I took a drive to see Stephanie and deliver some cat food for Amie.  This is a story in itself and a lesson that I won’t soon forget.  It began in January when Stephanie and I had a discussion about Amie and her obvious weight problem.  I offered to do some research to find a solution and eventually found a product with great reviews that I thought we should try.  I bought a case of Whole-Hearted canned cat food for Amie, hoping that her picky palate would appreciate the taste and it might help get her weight under control.

Fast forward two months… apparently Amie liked the product because on March 29th Stephanie wanted information on where to purchase more.

Success!

I offered to buy another case and throw in some dry food as well.  My plan was to have it delivered to Stephanie’s house so she could have it right away.  I asked Steph to verify her address and proceeded to place the order.

On Monday April 6th Stephanie asked, “Mom did the cat food ship?”

Hmm… I have an email that says it was delivered on March 31st.

Long story short… it was established that I TYPED THE WRONG ADDRESS FOR DELIVERY.

The weight control cat food was delivered to Stephanie’s neighbor… 3 houses down.  It was ALL MY FAULT and I could not in good conscience call Petco and lie.  So, I investigated the neighborhood, determined who lived at the house where the cat food was delivered, and sent them a handwritten, heartfelt, plea for assistance:

Good day sir,

I received a UPS tracking email letting me know that a shipment of cat food purchased for my daughter’s cat had been delivered to your home.  If you would be so kind to leave that package on the doorstep of 4#1# $1N@w0pd Road, I would be most grateful.

Thank you for your valuable time and understanding.

[My expectations were low, but how could it hurt to try?]

Fast forward to Tuesday April 21st.  My backup plan cat food had arrived at MY HOUSE and it was time to take a drive.  After a successful delivery of said cat food to Stephanie and her precious Amie, LB and I drove SLOWLY down the street to look for the mysterious weight-control-cat-food hording man.

As we drove by his house the only sign of life was a skinny, yet satisfied cat lounging on the front lawn.

Such is life.

Favorite # THREE

(Low Carb)

Sausage Biscuits

These sausage biscuits will make you gain weight even in ketosis.

Ingredients

  • 1 lb Sausage
  • 1.5 cups almond flour
  • 1 tbsp coconut flour
  • 1/4 cup sour cream
  • 1 egg
  • 2 tbsp butter
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup shredded cheddar cheese

Instructions

  • Heat a frying pan over medium heat. Remove the casings from the sausage and chop. Add the sausage to the pan and cook until browned, breaking into small pieces as it cooks.
  • Preheat oven to 350°. Spray muffin tin with cooking spray.
  • Combine the flours, sour cream, egg, butter, baking powder, and salt and mix until smooth. Fold in 1 cup of the cheddar and the cooked sausage.
  • Divide the dough between the prepared muffin tins.
  • Bake for 25-30 minutes or until golden brown.

Lemmy’s Castle

Last night while I was on the treadmill, Stephanie sent me a request for help.  It appears that she has been fortunate enough to enjoy time with Super Mario World.  In my past life this was an extreme time waster, but it was fun.  I enjoyed it, my kids enjoyed it, my sister and her kids enjoyed it.  I hope she doesn’t mind, but this was a wonderful memory.

Quarantine Week Three

April 19, 2020

Many people began social distancing early in March.  For me it was March 26th.  This is the third week of COVID19 lock-down.  I’m still working Monday through Friday, LB is still working Monday through Friday.  We just sit at our computers and solve people’s problems.  But that is proprietary, so I won’t be able to share.

Here are some highlights of our week.

Monday Monday

I’m not sure why this is a highlight, but on Monday rain made another an appearance.  It always makes me sad when it rains, and somehow seems to sap my energy.  And just like the guy whose feet are too big for his bed, nothing seems to fit…

Nevertheless, rain is necessary and with the rain, very soon my amaryllis will no longer look like small green aliens

Although it started poorly, quarantine week three was epic

Take-out Tuesday

Today we ventured out to pick up a prescription from CVS and at the last minute decided it would be a great day to treat ourselves to fajitas!  Life is too short to deny ourselves a few simple pleasures.  Knowing that Salsas is ready to accommodate, we called in an order of fajitas for pickup.  That take out treat contained more chips than my carb-free life is supposed to allow.  But alas, I succumbed and devoured the chips and salsa.

Tomorrow will be a new beginning.

Today the President sent me a check for $1200.

Is that sunshine I see?  Did it FINALLY stop raining???

The yard is a lake, but my amaryllis were very satisfied with this week’s rain.
