Friday Favorites

Even though I am working from home, and I have not had to endure the insane traffic that vexed me on my travels to the office, I still look forward to Friday.  I rejoice on Friday afternoon that I will not have to log into my workspace for TWO DAYS.  It is a liberating experience and I typically find myself dancing like no one is watching.  And it is a good thing they aren’t.

So I am once again celebrating Friday by sharing my favorites from this week.

Last week I mentioned that the glam babies would be visiting Florida for a few days.  They would have the chance to sleepover at 3 of their grandmother’s houses.  Friday night it was Glammy’s turn.  I could and should dedicate an entire post about that visit, but for now I’m going to choose a few photos that LB took to be my

Inside and Out!

The glam babies went to stay with their YaYa on Saturday night while LB and I “participated” in my graduation.

Tim Tebow was the speaker and he did a great job.  The choral group sang beautifully.  That’s about it.

Favorite # THREE

Yep, plant-based hot dogs.

Not the healthiest plant-based food I’ve tried, but only 60 calories.

LB decided he wanted to grill hot dogs earlier this week.  He grilled the greasy jalapeño cheese stuffed sausage dogs for himself, but I’ve been wanting to try these.  I have to admit, they have an odd texture, but taste excellent covered in yellow mustard and stuffed in a hotdog bun.

Over the weekend I hurt my knee.

I was being goofy and ended up on the floor with my leg twisted in the wrong direction.  It hurt so bad, I couldn’t walk on it for almost 24 hours.  LB bought a knee brace and it has been helpful.  There was no visit to an urgent care center, because I figured if I gave it a few days, it may get better.  I was right.  My knee is much improved.  Every once in awhile I find myself not wanting to put weight on it, but overall it is improving daily.

With all that said, my next favorite will have to be my new friend

Friday Favorites

WHERE DID I GO?

You might think that since I’m working from home and finished with college courses I’d be blogging NON STOP.

But alas, I have been unmotivated.

I’m not sure if it will get better anytime soon.  We’ll see how it goes.

On the subject of college courses, I mentioned that mine have been completed.  Finally.

A box of trinkets from Liberty University.

Now, one of those trinkets is special… it is a cord that is meant to be part of a graduate’s regalia.  This one is red.  It means I am a Cum Laude graduate.  Sadly, it is the wrong color.  It should be BLUE!

 

I’m so tired of dealing with them I’m not even going to protest.

I’ll hang it around my neck and pretend it is blue while I watch my virtual graduation this weekend.

Last weekend LB and I went to the St. John’s Town Center to return some items that I ordered from LOFT.

I’ve said it many times… LOFT is my favorite.  LB is too.

The Glambabies are in town this weekend and I’m looking forward to a visit.  They haven’t been to Florida since February.

Today they went to the Caddyshack with their Mema.

Afterward they rode along to pick up Levi and Thea from school.  Then they all went to Mema’s house for a fun time together.

Gnocchi

I had this on Tuesday night for the first time ever.  It was Girls Night Out and we went to Maggianos Little Italy.  I highly recommend the gnocchi.

Sadly, I didn’t take any people pics, only food pics 🤣

During our drive to the restaurant, Mama and I were discussing the book of the Revelation, where John writes to each of the churches.  She told me that each of these churches represents a period of time and the church of Laodicea represents the current church.  There is a lot to think about here.

Here are my Friday Favorites for this past week…

April the 10th was

National Siblings Day

and I have one of those…

That’s her on the left.  She is protecting others from possible exposure to germs on her neck LOL.

This pic was taken this past Wednesday at 9:41 PM while Gina and I waited in the Emergency Room for Mama to come back from her CAT scan.  We were both tired, but thankfully everything turned out well.  LB said it may not have been the ideal way to spend an evening, but it could have been a lot worse.

I’m thankful that these two were with Mama when the rescue came to take her to the ER.  And thank you Stuart for making it possible for Gina and me to stay with Mama.

She’s Okay

 She told me not to put pictures on social media, and I did not.  In this pic she is feeling much better and telling us about the event that resulted in her visit to the ER.  She told other stories of things that happened many years ago.  And she says she is going to write a book.  I believe she’ll have plenty of material.

In addition to stories, we talked about eating a healthy diet and the perils of a debilitating sweet tooth.  I told them about my banana dessert creations that are a good substitute for sugar laden treats.  Made mostly with frozen bananas.

Mama was interested in knowing more, so I sent her a picture showing how I “dispose of” my past-their-prime bananas. Not only are they good for making desserts, a couple of pieces cooked into oatmeal makes it extra yummy.

Friday Favorites

Happy Friday!

The events of this week began on Saturday with date night at the Alhambra Theater and Dining.  LB and I went to see the Smoke on the Mountain presentation.  It wasn’t my favorite show ever, but I enjoyed the music.  Some of the songs featured were “I’ll Fly Away”, “Whispering Hope”, “Angel Band”, and the “Blood Medley: Nothing but the Blood of Jesus, Are You Washed in Blood, There is Power in the Blood, There is a Fountain”.

The show reminded me of the [good ole] days when the church would have a “Sing”.  We would gather in the Faith Memorial Baptist Church main auditorium and a variety of southern gospel musicians like The Corinthians, the Faith Action Singers, the Faith Trio and The Youngmen would take turns entertaining us with their great talent.  I wish I had photos to share!

Then Sunday was a day to celebrate our risen Lord.  My family gathered at Mama’s house on Sunday afternoon to remember the event together and share a meal.

I made a carrot cake trifle

and English pea salad.  Stephanie and Amanda brought “company potatoes”

and Easter-themed cupcakes… which this little girl LOVED.

They also made art out of a strawberry pie

Stuart baked a ham, Clay fixed a big pot of green beans with lots of bacon.

Dillon brought his famous mac and cheese.  I may have gone back for thirds of that dish.

I didn’t get pictures of everything, but it was all SO good.  And I ate too much.

Richard wasn’t able to join us, but Emily posted some family pictures.  They were all sweet and it was difficult to pick one as a favorite to share…

On Monday, after LB finished work, we headed for the beach to have a picnic.  He loves going to the beach and I love being with him!

This would be a great place for a party, reunion, or a weekend visit to the beach with the whole family.  While we were there, LB grilled potatoes, onions, peppers, and burgers.  The strange looking item on the left is the top of his bun covered in ketchup and mustard.

Friday Favorites

Yes we made it through another week!  I feel certain that there are more hours in a workday than in a whole weekend.

I may not love working, but I recognize that I should be grateful because I am blessed to be one of the fortunate people who has kept her job during the last year.  There are many things that I am grateful for such as my family, my home, my health.

And I’m grateful to have made it through another good day of not having a stranger vaccinate me for or a virus with a 99% + survival rate using an experimental mRNA vaccine that was quickly concocted to combat a Fauci funded a bat coronavirus project in Wuhan, China.

There.  I said it.

I’m also grateful for friends that will get together for a spur of the moment St. Patrick’s day party.  The food was great, if I do say so myself

In addition to my artistic fruit platter, I made Reuben sliders.  With a corned beef brisket in the refrigerator, I needed to come up with a recipe to get this beef eaten.  So I made

It appears that this is primarily a food post.

 

Ingredients

  • 12 potato rolls
  • several ounces shredded corned beef
  • 1 package of baby Swiss cheese
  • shredded cabbage/Cole slaw
  • Russian Dressing ( I use the dressing from this recipe)
  • 2 Tbsp melted butter

Directions

  • Preheat oven to 350°F
  • Cut the rolls in half separating the top and bottom.
  • Place the bottoms of the rolls in a 9×13 pan (spray with PAM for easy removal).
  • Spread dressing on rolls. Top with a layer of cheese, Cole slaw, corned beef and another layer of cheese.
  • Top with the other half of the rolls and brush tops with the butter mixture.
  • Bake  25-30 minutes or until the cheese has melted and the tops are lightly browned.
  • Enjoy!

 

Although I didn’t try one myself, I understand they were very good.  I’ll have to make them again next year.

Guess what today is???

It has been a short week for me because I used a vacation day on Monday.  Among my errands spending a couple of hours with the dentist and her friends.  One of these days I will share my dental ventures with you.  My dentist appointment was in the afternoon, but in the morning LB decided we needed to do something other than the norm.  He suggested we go OUT for breakfast.  Now I have a new place to add to my favorites…

LB and I have always enjoyed finding a St. Patrick’s Day party to attend.  It is one of the highlights of the month of March.  Another annual March event is putting out new mulch in the front yard.  I typically buy the brown mulch from Wal-Mart.  This year we tried something new from COSTCO.
