Happy Friday!

Here are this weeks Favorites:

First up… a new recipe

Favorite # ONE

Keto Cheese Crackers

which I originally found on Pinterest posted by Family on KETO dot com.Ā  The Family calls them Keto Crackers without Eggs, which I thought was a weird name.Ā  And it is true, there are no eggs in these crackers.Ā  Eggs or not, these crackers are good.

Here’s the recipe:

Keto Cheese Crackers

  • Servings: 6
  • Time: 30 mins
  • Difficulty: easy
  • Print

Ingredients

  • 2 cups shredded cheese (cheddar, gouda, mozzarella, parmesan, or a mix)
  • 1 Tbsp butter
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • a pinch of salt
  • 1 Tbsp sesame seeds + some to sprinkle
  • a pinch of dried oregano
  • pinch of powdered garlic
  • a pinch of any other spices optional (chili flakes, paprika, dried basil)

Directions

  • In a microwave safe bowl, mix everything together: grated cheese with butter, almond flour, coconut flour, sesame seeds, pinch of salt, pinch of garlic, herbs and sesame seeds.
  • Microwave on high for 1 minute. Remove from microwave, stir well and knead the dough with your hands. If it’s still not possible to knead, microwave for 30 seconds more and then knead the dough.
  • Roll the dough on a parchment paper and sprinkle with 1 TBS of sesame seeds if you like.
  • Cut the crackers in a shape you prefer.Ā  I used a cookie cutter.
  • If you just want to have crackers without leftovers cut in cubes or triangles.
  • Bake at 375° F for 8 – 15 minutes until golden brown.
  • Enjoy!

UPDATE: Preparing for a Return to the Office.

My son and his family will be moving back to Florida.

I’m sure that they enjoyed their stay in Charleston, but everyone in my family is happy about their return next month!

Celebrating Independence Day

Hopefully everyone had a great day and enjoyed a long holiday weekend.Ā  LB had to work on the 4th due to the possibility that hurricane Elsa would negatively impacting the southeast.Ā  For that reason, we didn’t go out or meet with family and friends, but we did enjoy an American favorite

Favorite # THREE

The real beef kind… not plant based!

But as everyone knows, there is more to celebrating our July 4th Independence Day than eating hotdogs.Ā  Much effort went into our country becoming independent.

Favorite # FOUR

Independence

It is a blessing!

Although we weren’t technically independent on the 4th of July in 1776, we DECLARED it.Ā  On that day we were neither free of the British crown nor the American Revolutionary War.Ā  That war would last until 1783.Ā  During this time, Colonial America stood side by side with our Founding Fathers to fight.Ā  Colonial America eventually won the Revolutionary War and freedom from the British government and their atrocities.Ā  It shouldn’t be taken lightly that a great deal of blood was shed to bestow the the blessings of freedom on those of us who enjoy it today.Ā  Anyone who alleges differently is ignorant.

Ā Independence is a blessing and if Americans don’t wake up, we’re likely to lose it.

Happy Friday and Happy Summer!

Today is the First Friday of summer 2021!

Let the rain begin!

Yes the season officially changed on Sunday, which was also Father’s Day.

I didn’t write a new post about Daddy this year, but I’ve written a lot about him in the past.Ā  You can read some of my other posts here and here.Ā  Needless to say, I did think about him on Father’s Day.Ā  LB and I stopped to leave flowers Sunday afternoon.

Favorite # TWO

A one-pan recipe from RuledDotMe

 

Roasted Chicken Thighs in Red Pepper Sauce

  • Servings: 6
  • Time: 25-30 mins
  • Difficulty: easy
  • Print

Ingredients

  • 1.5 pounds boneless, skinless, chicken thighs
  • Salt and pepper
  • 1 tablespoon coconut oil
  • 4 ounces goat cheese
  • 2 tablespoons chopped fresh parsley
Roasted Red Pepper Sauce
  • 4 ounces roasted red peppers
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • ½ cup heavy cream

Directions

  1. Preheat your oven to 350F. At the same time, preheat a skillet over medium-high heat.
  2. Season the chicken with salt and pepper.
  3. Add coconut oil to the preheated skillet. Once the oil has melted, place the chickenĀ  into the skillet. Sear for 5 minutes on each side or until the chicken is browned.
  4. Puree the roasted red peppers, garlic, and olive oil in a blender. Pour the heavy cream into the pepper mixture, then blend thoroughly.
  5. Remove the skillet from the stove, then pour the sauce over the top of the thighs. Flip them over to ensure that both sides are coated.
  6. Crumble the goat cheese over the top of the sauced chicken. Transfer the skillet to the oven then bake for 10-15 minutes.
  7. Garnish with parsley and enjoy!

My son and his family came to town this week.

On Wednesday night we got together with the whole for dinner and birthday cake.

At my family gathering on Wednesday evening, it was insinuated [once again] that I am a conspiracy theorist.Ā  Lucky for me I’m not the only American “guilty” of this.

But in my defense, I feel that if you live above ground in the Unites States of America, you should know that there is a forensic audit being conducted in Arizona (Maricopa County) because there was massive election fraud in the November 3, 2020 election.Ā  I mentioned it in this post.

Favorite # FOUR

Conspiracy Theory or NOT

Somewhere between 3 and 4 AM on November 4th, I woke up, looked at my phone, and saw a dramatic change had taken place.

Michigan totals revealed added votes for Biden, which is typical when counting votes, but votes for Trump were SUBTRACTED.Ā  How could the tally show a reduction in the number of votes?Ā  That was when I began to question our electoral system.Ā  I found out that I am not the only one with questions.Ā  I’ve included an example below.

As you’ll hear in the following video, “votes are always additive and should never go negative”

Favorite # FIVE

Rockin’ on the River

with LB at Azaleana Manor in Orange Park.

Rockin’ on the River was the name of the event.Ā  We attended on Thursday evening for dinner and entertainment by two bands.Ā  One of the bands was the 77ds.Ā  The other was The Chris Thomas Band.

This is Chris Thomas and his band.

Mr. Thomas is fabulously talented.

Last week was summer vacation week and I had a lot of favorites to share, but no time to share them.Ā  This week I went back to work and had barely any favorites.

I was the lucky recipient of a beautifully colored picture of Shutterfly the birthday pony.Ā  At first glance I thought it was Pinkie Pie but someone corrected me immediately lol.Ā  It was sent by a little girl who calls me Glammy and spells it like this:

Friday Favorites

Even though I am working from home, and I have not had to endure the insane traffic that vexed me on my travels to the office, I still look forward to Friday.Ā  I rejoice on Friday afternoon that I will not have to log into my workspace for TWO DAYS.Ā  It is a liberating experience and I typically find myself dancing like no one is watching.Ā  And it is a good thing they aren’t.

So I am once again celebrating Friday by sharing my favorites from this week.

Last week I mentioned that the glam babies would be visiting Florida for a few days.Ā  They would have the chance to sleepover at 3 of their grandmother’s houses.Ā  Friday night it was Glammy’s turn.Ā  I could and should dedicate an entire post about that visit, but for now I’m going to choose a few photos that LB took to be my

Inside and Out!

The glam babies went to stay with their YaYa on Saturday night while LB and I “participated” in my graduation.

Tim Tebow was the speaker and he did a great job.Ā  The choral group sang beautifully.Ā  That’s about it.

Favorite # THREE

Yep, plant-based hot dogs.

Not the healthiest plant-based food I’ve tried, but only 60 calories.

LB decided he wanted to grill hot dogs earlier this week.Ā  He grilled the greasy jalapeƱo cheese stuffed sausage dogs for himself, but I’ve been wanting to try these.Ā  I have to admit, they have an odd texture, but taste excellent covered in yellow mustard and stuffed in a hotdog bun.

Over the weekend I hurt my knee.

I was being goofy and ended up on the floor with my leg twisted in the wrong direction.Ā  It hurt so bad, I couldn’t walk on it for almost 24 hours.Ā  LB bought a knee brace and it has been helpful.Ā  There was no visit to an urgent care center, because I figured if I gave it a few days, it may get better.Ā  I was right.Ā  My knee is much improved.Ā  Every once in awhile I find myself not wanting to put weight on it, but overall it is improving daily.

With all that said, my next favorite will have to be my new friend

Friday Favorites

WHERE DID I GO?

You might think that since I’m working from home and finished with college courses I’d be blogging NON STOP.

But alas, I have been unmotivated.

I’m not sure if it will get better anytime soon.Ā  We’ll see how it goes.

On the subject of college courses, I mentioned that mine have been completed.Ā  Finally.

I got this in the mail

A box of trinkets from Liberty University.

Now, one of those trinkets is special… it is a cord that is meant to be part of a graduate’s regalia.Ā  This one is red.Ā  It means I am a Cum Laude graduate.Ā  Sadly, it is the wrong color.Ā  It should be BLUE!

I’m so tired of dealing with them I’m not even going to protest.

I’ll hang it around my neck and pretend it is blue while I watch my virtual graduation this weekend.

Last weekend LB and I went to the St. John’s Town Center to return some items that I ordered from LOFT.

Favorite # TWO

I’ve said it many times… LOFT is my favorite.Ā  LB is too.

I also like Express and we stopped in there as well.

Afterward they rode along to pick up Levi and Thea from school.Ā  Then they all went to Mema’s house for a fun time together.

Gnocchi

I had this on Tuesday night for the first time ever.Ā  It was Girls Night Out and we went to Maggianos Little Italy.Ā  I highly recommend the gnocchi.

Sadly, I didn’t take any people pics, only food pics 🤣

During our drive to the restaurant, Mama and I were discussing the book of the Revelation, where John writes to each of the churches.Ā  She told me that each of these churches represents a period of time and the church of Laodicea represents the current church.Ā  There is a lot to think about here.
