LB’s Favorite Oatmeal Cookies

Also Kim’s Favorite Oatmeal Cookies!

Sometimes you have a craving for a small bite of sweetness.

Sometimes You

JUST NEED A COOKIE!

 

Or several.

And since you are always on a diet, there are no cookies in the house.

Desperate times call for desperate measures…

It is Time to Bake!

These Oatmeal Cookies are soft and chewy but also crispy on the outside.

They’re also very hard to resist!

To make these cookies you will need:

1 cup (2 sticks) butter, 1 cup sugar, 1 cup brown sugar, 2 eggs, 2 tsp. vanilla, 1 tsp. salt, 1 tsp. baking powder, 1 tsp. baking soda, 2 cups flour, 2 cups oatmeal, 1/2 cup coconut, and 1/2 cup pecans (pronounced pee-CANs) which are optional.

This is what to do:

Cream together butter, sugars, eggs and vanilla.  Brown sugar contains more moisture than white sugar. If you’re like me and you enjoy tweaking recipes, remember… it is important to include brown sugar as it lends itself to softer, chewier cookies.

Whisk all dry ingredients together in a separate bowl.  Whisking will aerate the flour and thoroughly mix the salt, baking powder, and baking soda.

Add dry ingredients to wet ingredients and mix well.

Measure cookies using a tablespoon and roll into balls.

Then lightly press onto a parchment lined baking sheet.

Bake at 350°

for 8 minutes.

My recipe makes about 6 dozen.

Pictured is slightly less than 6 dozen because I’ve already enjoyed taste testing.

Here’s the Recipe:

 

LB's Favorite Oatmeal Cookies

  • Servings: 6 dozen
  • Print

Ingredients:

1 cup (2 sticks) butter

1 cup sugar

1 cup brown sugar

2 eggs

2 tsp. vanilla

1 tsp. salt

1 tsp. baking powder

1 tsp. baking soda

2 cups flour

2 cups oatmeal

1/2 cup coconut

1/2 cup pecans (optional)

Directions:

Cream together butter, sugars, eggs and vanilla.

Mix all dry ingredients together in a separate bowl.

Add dry ingredients to wet ingredients and mix well.

Roll into balls 1 Tbsp and lightly press onto  parchment lined baking sheet.

Bake at 350 for 8 minutes.

Little Miss Sunshine

A 2006 comedy/drama which takes a family on a road trip like no other.  It is hilarious, disconcerting and strangely heartwarming.  Little Miss Sunshine features Abigail Breslin as Olive and also stars Greg Kinnear, Steve Carell, Toni Collette, Paul Dano, and Alan Arkin.  Olive’s pursuit of a beauty pageant crown is the engine that drives the dysfunctional family on a road trip across the country.

Personalization Mall

I’ve made several purchases from Personalization Mall over the years.  Most recently was the gift that I dubbed the “Controversial Mema’s Blessing” plaque.

It is actually named “Our Grandchildren Personalized Long Canvas Print” and you can see the options online here.

I had one of these customized as a gift for my Mama on Mother’s Day and listed all of her grandchildren and great-grandchildren in the order that they became part of the family (which is mostly birth order with the exception of the two that married into the family).

Apparently a UPS person thought it would be a good idea to lean it up against the garage door.  When LB left home that afternoon, he got into his car, opened the garage door, and it fell.  At that point, he promptly drove over it.  When I came home that afternoon I drove passed it as I pulled into the garage.

There it lay embossed with fresh Ford tire tracks.

I had already contacted the company about the “damage” prior to learning about all the mistakes I had made when I personalized the canvas print.  They agreed to refund the cost of the frame.

Personalization Mall is a great company.

I’ve ordered a replacement and this time it will be correct.

Which is not an account of this peculiar young member of the Addams Family, but all about what is happening in my world on this wonderful midweek day.

What We’re Eating This Week

As I’ve mentioned before, LB can eat anything he wants and Kim has to watch what she eats or she will pay the price.  HOWEVER once in a while I throw caution to the wind and go on a baking spree.  In addition to the Mother’s Day pound cake I baked on Sunday, I baked the best oatmeal cookies ever!  The cake went home with Mama, but the cookies are still here.

And they keep screaming at me.In an effort to save myself, I have banished most of them to the freezer.

Having dinner with the little ones on Mother’s Day.

 

What I’m Loving

This tiny little Glammy’s girl is already 3 months old.

  I am loving her tiny profile, tiny hairdo, and tiny pink gingham Mother’s Day dress!

 

 

What We’ve Been Up To

Work Work Work all week long and fun on the weekend!

 

What I’m Dreading

My 6 month dental visit is coming up.  While I’m sure it is just as pleasant as any dental event could possibly be, I don’t love it and always leave feeling slightly damp from the experience.

 

What I’m Working On

Being positive.

This requires a lot of self talk.

 

What I’m Excited About

Memorial Day Weekend which gives me an extra day to be OFF WORK!

I found this fun collection of celebratory paper products at Costco which would be great to use for a Memorial Day cookout

It doesn’t take much to get me excited!

 

What I’m Watching/Reading

There is neither a show that I feel I have to see, nor am I reading anything at the moment.  I’ve thought about using Audible to listen to books while I commute, but that plan has yet to be put into action.

What I’m Wearing

At the moment I’m wearing workout clothes.

At the moment I anticipating sleeping in on Saturday morning.  My Saturday evening plans are not yet secured so I’ll save those for another post!

 

 

What I’m Looking Forward to Next Month

My Birthday happens next month.

While I’m not looking forward to my new number (age is just a number, right?), I am totally looking forward to another day off from work.

Mother’s Day

It must drive LB crazy that I rarely know the answer to the question “what is the agenda today?” especially when my extended family is involved.

Yesterday was no exception.

On

Mother’s Day

the one constant is the annual pedicure with my younger daughter Amanda.

I know for certain that this will take place at some point in the afternoon.

Last year we tried to get my Mama to join us

…this year she did. 

My Mother’s Day afternoon began with a pound cake.  Mama likes warm pound cake and I like to bake, so it works out well for both of us.

She came to my house around 2:30 and I served her a warm piece and wrapped up the rest for her to take home.

There was also the presentation of

The Controversial “Mema’s Blessings” Plaque

which she loved; however it WILL be replaced.  Apparently I have no idea what year my nephews were born or at what point Emily and Chynna joined our family.

Also LB ran over it.

 

When Amanda arrived, she presented me with a lovely gift from Stephanie and herself:  a custom makeup case from Pop & Suki and a bonus gift … Stacking Hoop Earrings. 

I also received a Pioneer Woman 3 piece serving bowl set from Richard and Emily which was presented by Lydia.

My children are very considerate.

While Mama, Amanda and I visited together, the secret plans were revealed.

It had been decided that we would join together at Mama’s house on Mother’s Day evening to participate in a BYOM (bring your own meal) event.

 Since it was my turn to be Lydia’s best friend, I was invited to sit at the little red table.  I saw a lot of Chinese takeout at the event and a lot of rice on the floor.

Nevertheless, it was a pleasant time to visit with family.And I am blessed with a lovely one.

Although I love hearing “Happy Mother’s Day”, the sweetest words I heard yesterday came when I announced it was time for me to head home.  Those words came from Lydia as she told me “I don’t want you to go”.

Its a joy to be a Glammy!

It is also a joy and a blessing to be a mother and to be loved by such a sweet mother.

I consider myself fortunate to have the finest one that I know.  She is kind and considerate. Mama loves me unconditionally.  She has always been there when I’ve needed help, which has been often.    And she is always thinking of others, and especially her children and grandchildren.

The bible says “As is the mother, so is her daughter.” (Ezekiel 16:4)

…so I’m expecting myself to ultimately become more like her.

Transformation Tuesday

This Transformation Tuesday post is not about a makeover or a new hair style.  It is totally about how my Tuesday evening was transformed into a completely different evening than I expected!

 As I was driving home from work Tuesday evening, my cell phone began to ring.  It was LB.  He had news to share.  Apparently he had been stalking StubHub all day anticipating a drop in price for concert tickets to see

James Taylor

& His All-Star Band

As luck would have it, LB managed to purchase two tickets to see James Taylor for twenty-nine dollars each.

I have to admit that once I was in the car with him, heading to the Jacksonville Veterans Memorial Arena, I began to look forward to the event.

Upon arrival it was obvious that previous plans to have Bonnie Raitt join James Taylor had been changed.  Signs were posted every three feet “Bonnie Raitt will not be performing tonight”.  I had heard the announcement on the radio about a week prior, however I also heard a recorded announcement that had not been changed in conjunction with the change of plans.  I know I would have enjoyed hearing Bonnie Raitt as I am familiar with many of her songs.  James Taylor songs, not so much.

Although it was a nice concert and I enjoyed being there, I recognized only a few songs he performed: “Fire and Rain” and “Up on the Roof”.

We had pretty good seats.

At this point in my story I’ll interject a little known fact: I am not a James Taylor fan.  Apparently I missed the era of his popularity.  I was, however, happy to know that LB was very excited.  For that reason and others I was more than happy to accompany him to the concert.And I thoroughly enjoyed my evening with LB.

Softball?  I can’t think of any outside games so I must not have a favorite.

 

 

Favorite TV Series ever?

Hmmm…

I don’t know that I’ve truly loved a TV series since Little House on the Prairie.

Growing up I watched The Brady Bunch, I Dream of Jeannie, and Bewitched.  They just don’t make ’em like they used to!

Favorite Movie Theater Candy?

IF I happen to find myself in a movie theater, I probably will not visit the concessions stand.  Too many calories to consume while remaining in a fixed position.  HOWEVER… my favorite candy is M&Ms.

 

 

How do you like your popcorn?

Hot and Buttery! But, alas, I don’t remember the last time I had popcorn with butter.

 

 

3D movies with glasses: Yes or No?

I’ve only experienced one that I can recall: A Christmas Carol at the IMAX Theater in World Golf Village near St. Augustine years ago.  I thought it was very good.

 

 

Favorite Genre of Books to Read?

Self-help

 Because I need all the help I can get!

 

 

Favorite Book ever read?

I’m thinking it is probably Green Eggs and Ham by Dr. Seuss.

She Loves Horses

…that Run for the Roses.

I do not like to ride horses, nor do I like to be near horses, but I LOVE to watch them run.  Horses are majestic and beautiful.  I admire them from afar.  And I dearly love the event that features these beauties every first Saturday of May.

The Kentucky Derby

has been deemed the most exciting (fastest) two minutes in sports.

The race features three-year-old Thoroughbreds that run a distance of one and a quarter miles at Churchill Downs in Louisville, Kentucky.

 The Kentucky Derby has been run every year since 1875.  It is the first leg of the American Triple Crown and is followed by the Preakness Stakes, then the Belmont Stakes.

My first pick was Mendelssohn.  Mendelssohn’s odds were 5-1, but before I knew that, I chose him, just because I like his name.  When the race began, Mendelssohn was bumped out of the gate and never recovered.

Mendelssohn came in LAST.

My other pick was Justify.

Justify finished much better.

My tendency is to stand in front of the television to observe sports events that have my interest, and like many others have watched the Kentucky Derby from my living room for the past several years.

This year LB decided that we should get dressed up and go out to enjoy the race in the company of others.  He does a good job of getting me out of my comfort zone.

LB made arrangements for us to go to the

Cowford Chophouse

in downtown Jacksonville to watch the 144th Kentucky Derby.

We enjoyed a rooftop party filled with guests wearing fancy hats and bow ties.

Some day I may find myself enjoying the company of others on the first Saturday of May at Churchill Downs.  With a man like LB in my life, it wouldn’t surprise me.
