Gnocchi

I had this on Tuesday night for the first time ever.  It was Girls Night Out and we went to Maggianos Little Italy.  I highly recommend the gnocchi.

Sadly, I didn’t take any people pics, only food pics 🤣

During our drive to the restaurant, Mama and I were discussing the book of the Revelation, where John writes to each of the churches.  She told me that each of these churches represents a period of time and the church of Laodicea represents the current church.  There is a lot to think about here.

Frozen Banana ‘Ice Cream’

First and foremost…

Don’t throw away those ripe bananas!

When the banana is ripe, it will be soft, sweet, and ready to freeze.

Peel the bananas and slice. It really doesn’t matter what size as long as the pieces are small enough to blend.

Put the bananas in an airtight container. Place in a freezer-safe glass bowl or freezer bag.

Freeze until ready to use, at least 2 hours or overnight.

Pulse the frozen banana pieces in a food processor or blender. Transfer the frozen banana pieces into a food processor or high-speed blender. (The more powerful the better.) Pulse to break up.

Keep pulsing At first the banana pieces will look crumbly. I’ve found that sometimes adding a little cold water is helpful.  Scrape down the sides of the blender.

Switch from pulsing to blending. At first it looks unappealing, but hang in there. Scrape down the sides of the blender.

This takes a little while. Keep blending. The banana will become smooth.

As the last bits of banana smooth out, you’ll see the mixture change from blended banana to creamy, soft-serve ice cream texture. Blend for a few more seconds to aerate the ice cream. (If additional mix-ins are desired, like peanut butter or chocolate chips, this is the time.)

Transfer to an airtight container and freeze until solid.

You can eat the ice cream immediately, which is my preference, or drink like a milkshake. You can also transfer it into the airtight container and freeze it until solid, like traditional ice cream.

  • Servings: 2
  • Time: 15 mins
  • Difficulty: easy

Instructions

  1. Peel the bananas and slice. I cut mine into four pieces. It really doesn’t matter what size as long as they are pieces are evenly sized and small enough to blend.
  2. Put the bananas in an airtight container such as a freezer-safe glass bowl or freezer bag.

  3. Freeze the banana pieces for at least 2 hours until ready to use, at least 2 hours or overnight.

  4. Pulse the frozen banana pieces in a food processor or blender. From the freezer, transfer the frozen banana pieces into a food processor or high-speed blender (the more powerful the better). Pulse to break up.

  5. Keep pulsing. At first the banana pieces will look crumbly. Sometimes a little cold water is needed.  Scrape down the sides of the blender.

  6. Switch to blending.  It may look unappealing, but hang in there. Scrape down the sides of the blender.

  7. Keep blending — this takes a little while. Keep blending. It will become smoother but still have chunks of banana. Scrape down the food processor.

  8. Watch the magic!  As the last bits of banana smooth out, you’ll see the mixture shift from blended banana to creamy, soft-serve ice cream texture. Blend for a few more seconds to aerate the ice cream.  If additional mix-ins are desired, like peanut butter or chocolate chips, this is the time.

  9. Transfer to an airtight container and freeze until solid or you can eat the soft ice cream immediately. If you transfer it back into the airtight container and freeze it until solid, like traditional ice cream.

     

Notes

Food processor vs. blender: It is likely that a food processor works best for this, as it is larger and allows for the banana to get quickly creamy and aerated.  I make it in a blender, one banana at a time since my blender is not powerful enough to process several frozen bananas.

Mix-in Ideas
While the one-ingredient banana ice cream is low in calories and easy to make, it doesn’t take much effort to zhuzh it up by making it two– or even three– ingredient ice cream. Here are some mix-in ideas…

  • Peanut butter
  • Honey
  •  Chocolate chips
  • Nuts
  • Nutella
  • Frozen berries
  • Tablespoon of cocoa powder
  • Half a teaspoon of cinnamon

Or make a sundae…Just the way LB likes it!

Happy Friday!

Here are my Friday Favorites for this past week…

April the 10th was

National Siblings Day

and I have one of those…

Favorite # ONE

That’s her on the left.  She is protecting others from possible exposure to germs on her neck LOL.

This pic was taken this past Wednesday at 9:41 PM while Gina and I waited in the Emergency Room for Mama to come back from her CAT scan.  We were both tired, but thankfully everything turned out well.  LB said it may not have been the ideal way to spend an evening, but it could have been a lot worse.

I’m thankful that these two were with Mama when the rescue came to take her to the ER.  And thank you Stuart for making it possible for Gina and me to stay with Mama.

Favorite # THREE

She’s Okay

 She told me not to put pictures on social media, and I did not.  In this pic she is feeling much better and telling us about the event that resulted in her visit to the ER.  She told other stories of things that happened many years ago.  And she says she is going to write a book.  I believe she’ll have plenty of material.

In addition to stories, we talked about eating a healthy diet and the perils of a debilitating sweet tooth.  I told them about my banana dessert creations that are a good substitute for sugar laden treats.  Made mostly with frozen bananas.

Thursday just happened to be National Banana Day

Mama was interested in knowing more, so I sent her a picture showing how I “dispose of” my past-their-prime bananas. Not only are they good for making desserts, a couple of pieces cooked into oatmeal makes it extra yummy.

Friday Favorites

Happy Friday!

The events of this week began on Saturday with date night at the Alhambra Theater and Dining.  LB and I went to see the Smoke on the Mountain presentation.  It wasn’t my favorite show ever, but I enjoyed the music.  Some of the songs featured were “I’ll Fly Away”, “Whispering Hope”, “Angel Band”, and the “Blood Medley: Nothing but the Blood of Jesus, Are You Washed in Blood, There is Power in the Blood, There is a Fountain”.

The show reminded me of the [good ole] days when the church would have a “Sing”.  We would gather in the Faith Memorial Baptist Church main auditorium and a variety of southern gospel musicians like The Corinthians, the Faith Action Singers, the Faith Trio and The Youngmen would take turns entertaining us with their great talent.  I wish I had photos to share!

Then Sunday was a day to celebrate our risen Lord.  My family gathered at Mama’s house on Sunday afternoon to remember the event together and share a meal.

I made a carrot cake trifle

and English pea salad.  Stephanie and Amanda brought “company potatoes”

and Easter-themed cupcakes… which this little girl LOVED.

They also made art out of a strawberry pie

Stuart baked a ham, Clay fixed a big pot of green beans with lots of bacon.

Dillon brought his famous mac and cheese.  I may have gone back for thirds of that dish.

I didn’t get pictures of everything, but it was all SO good.  And I ate too much.

Richard wasn’t able to join us, but Emily posted some family pictures.  They were all sweet and it was difficult to pick one as a favorite to share…

On Monday, after LB finished work, we headed for the beach to have a picnic.  He loves going to the beach and I love being with him!

We found a new place that is perfect for a cookout at the beach!

This would be a great place for a party, reunion, or a weekend visit to the beach with the whole family.  While we were there, LB grilled potatoes, onions, peppers, and burgers.  The strange looking item on the left is the top of his bun covered in ketchup and mustard.

Yes we made it through another week!  I feel certain that there are more hours in a workday than in a whole weekend.

I may not love working, but I recognize that I should be grateful because I am blessed to be one of the fortunate people who has kept her job during the last year.  There are many things that I am grateful for such as my family, my home, my health.

And I’m grateful to have made it through another good day of not having a stranger vaccinate me for or a virus with a 99% + survival rate using an experimental mRNA vaccine that was quickly concocted to combat a Fauci funded a bat coronavirus project in Wuhan, China.

There.  I said it.

I’m also grateful for friends that will get together for a spur of the moment St. Patrick’s day party.  The food was great, if I do say so myself

In addition to my artistic fruit platter, I made Reuben sliders.  With a corned beef brisket in the refrigerator, I needed to come up with a recipe to get this beef eaten.  So I made

It appears that this is primarily a food post.

 

Ingredients

  • 12 potato rolls
  • several ounces shredded corned beef
  • 1 package of baby Swiss cheese
  • shredded cabbage/Cole slaw
  • Russian Dressing ( I use the dressing from this recipe)
  • 2 Tbsp melted butter

Directions

  • Preheat oven to 350°F
  • Cut the rolls in half separating the top and bottom.
  • Place the bottoms of the rolls in a 9×13 pan (spray with PAM for easy removal).
  • Spread dressing on rolls. Top with a layer of cheese, Cole slaw, corned beef and another layer of cheese.
  • Top with the other half of the rolls and brush tops with the butter mixture.
  • Bake  25-30 minutes or until the cheese has melted and the tops are lightly browned.
  • Enjoy!

 

Although I didn’t try one myself, I understand they were very good.  I’ll have to make them again next year.

Guess what today is???

Its Friday!

It has been a short week for me because I used a vacation day on Monday.  Among my errands spending a couple of hours with the dentist and her friends.  One of these days I will share my dental ventures with you.  My dentist appointment was in the afternoon, but in the morning LB decided we needed to do something other than the norm.  He suggested we go OUT for breakfast.  Now I have a new place to add to my favorites…

LB ordered the crab cakes Benedict and I ordered the salmon eggs Benedict.  Both came with a bucket of grits.  And it was all delicious!

LB and I have always enjoyed finding a St. Patrick’s Day party to attend.  It is one of the highlights of the month of March.  Another annual March event is putting out new mulch in the front yard.  I typically buy the brown mulch from Wal-Mart.  This year we tried something new from COSTCO.

It costs a bit more, but it is supposed to maintain color longer and not float away.  The yard maintenance season has begun!
