Happy Friday!

Here are my Friday Favorites for this past week…

April the 10th was

National Siblings Day

and I have one of those…

Favorite # ONE

That’s her on the left.  She is protecting others from possible exposure to germs on her neck LOL.

This pic was taken this past Wednesday at 9:41 PM while Gina and I waited in the Emergency Room for Mama to come back from her CAT scan.  We were both tired, but thankfully everything turned out well.  LB said it may not have been the ideal way to spend an evening, but it could have been a lot worse.

I’m thankful that these two were with Mama when the rescue came to take her to the ER.  And thank you Stuart for making it possible for Gina and me to stay with Mama.

Favorite # THREE

She’s Okay

 She told me not to put pictures on social media, and I did not.  In this pic she is feeling much better and telling us about the event that resulted in her visit to the ER.  She told other stories of things that happened many years ago.  And she says she is going to write a book.  I believe she’ll have plenty of material.

In addition to stories, we talked about eating a healthy diet and the perils of a debilitating sweet tooth.  I told them about my banana dessert creations that are a good substitute for sugar laden treats.  Made mostly with frozen bananas.

Thursday just happened to be National Banana Day

Mama was interested in knowing more, so I sent her a picture showing how I “dispose of” my past-their-prime bananas. Not only are they good for making desserts, a couple of pieces cooked into oatmeal makes it extra yummy.

Friday Favorites

Happy Friday!

The events of this week began on Saturday with date night at the Alhambra Theater and Dining.  LB and I went to see the Smoke on the Mountain presentation.  It wasn’t my favorite show ever, but I enjoyed the music.  Some of the songs featured were “I’ll Fly Away”, “Whispering Hope”, “Angel Band”, and the “Blood Medley: Nothing but the Blood of Jesus, Are You Washed in Blood, There is Power in the Blood, There is a Fountain”.

The show reminded me of the [good ole] days when the church would have a “Sing”.  We would gather in the Faith Memorial Baptist Church main auditorium and a variety of southern gospel musicians like The Corinthians, the Faith Action Singers, the Faith Trio and The Youngmen would take turns entertaining us with their great talent.  I wish I had photos to share!

Then Sunday was a day to celebrate our risen Lord.  My family gathered at Mama’s house on Sunday afternoon to remember the event together and share a meal.

I made a carrot cake trifle

and English pea salad.  Stephanie and Amanda brought “company potatoes”

and Easter-themed cupcakes… which this little girl LOVED.

They also made art out of a strawberry pie

Stuart baked a ham, Clay fixed a big pot of green beans with lots of bacon.

Dillon brought his famous mac and cheese.  I may have gone back for thirds of that dish.

I didn’t get pictures of everything, but it was all SO good.  And I ate too much.

Richard wasn’t able to join us, but Emily posted some family pictures.  They were all sweet and it was difficult to pick one as a favorite to share…

After dinner Amanda planned to go home and have an Easter egg hunt for her puppy.

On Monday, after LB finished work, we headed for the beach to have a picnic.  He loves going to the beach and I love being with him!

We found a new place that is perfect for a cookout at the beach!

Peter’s Point park

This would be a great place for a party, reunion, or a weekend visit to the beach with the whole family.  While we were there, LB grilled potatoes, onions, peppers, and burgers.  The strange looking item on the left is the top of his bun covered in ketchup and mustard.

Friday Favorites

Happy Friday!

This is the first week of March 2021.  I can’t believe how time flies.  It has been one year since the start of the plandemic.  I’m hoping this month will bring good news and 2021 will begin looking better than 2020.

Favorite # ONE

Happy Birthday Daddy

He would have been 75 years old on March 1st.He was and is precious.

I didn’t publish a new blog post this year, but I’ve written several posts celebrating Daddy.  Last year I published this post.

If you haven’t read it yet, I think it is worth a read.

My nephew Clay was remembering some of the record albums and songs that Daddy enjoyed.  He started a chat with the family on Monday March 1st to share some memories.

As I was listening to some of my Daddy’s records and favorite songs, I thought I would share another version of one that I discovered.  After I was listening to Gentle On My Mind I noticed another version by The Band Perry

It wouldn’t be right if I didn’t say something about food in my post today.  I mentioned my sushi bowl last week in this post.  This week I did one better…

Dr. Seuss

This belonged to either Stephanie or Amanda.  It looks like Amanda started to write her name at the bottom,  Richard espcially loved one of the books in this collection:  Green Eggs and Ham.  He eventually learned to recite it as I read it to him.  I’m glad I held onto these books.  You never know when the other Dr. Seuss books may offend someone to the point that they eliminate them all.

Here goes…

What we’re eating

I mentioned in this post that I could live on orange soda and rotisserie chicken.  Once upon a time, that was my diet.  But at the beginning of this year, I took part in the Daniel Fast for 21 days.  On the menu… Plants and Water.  Think BEANS, GREENS, POTATOES, RICE, and LENTILS.

This is mixed salad greens doused with my homemade chickpea dressing and a sprinkle of Tajin chili-lime seasoning.

Interestingly enough, I enjoyed the Daniel Fast and I am proud of my success.  Also, I like the way that I feel.  I am still following a whole food plant based diet.  LB is half following.

Now that the 21 days has ended, I’m drinking coffee in the morning again, but with almond/coconut creamer only. This one is pretty good. Hummus has replaced rotisserie chicken as my new favorite.  But I am once again enjoying my orange soda on the weekend!

What We’ve Been Up To

Last week I made a birthday cake.  A four-tiered birthday cake.  It took four days.

This was a learning experience that included cake boards and dowels.  I baked the ten inch layers on Wednesday, the eight, six, and four inch layers on Thursday, applied the crumb coat on Friday, and put it all together on Saturday.  Although the finished product was pretty ugly, the princess who ordered it seemed pleased.

What I’m Working On

Trying to come up with content for my blog.  Now that I rarely go anywhere, it isn’t as interesting to post about what has been going on.

If I report my thoughts about politics any more than I already have, I may be cancelled 😆

What I’m Excited About

Daylight Saving Time

which begins on the 2nd Sunday in March.

Yes it is true that we are going to lose an hour, but I prepared for this and took the following Monday off.

What I’m Watching/Reading

With my 21 day Daniel Fast book came a devotional.

Since that 21 day experience ended, I have been reading my Bible every morning.  It only takes 21 days to form a habit.

~

What I’m Listening To

since I’m increasingly and overwhelmingly disgusted with MSM, I’ve been listing to alternate news, for example     AndWeKnow  on Rumble.

~

What I’m Wearing

I haven’t bought into the lounge-wear trend.  So I am currently wearing jeans.

Every.

Day.

What I’m Doing This Weekend

I absolutely will  NOT be baking LOL!

At the moment I anticipating sleeping in on Saturday morning.  Nothing has been planned at this point.  Going out isn’t as much fun as it used to be, mostly because I can’t breathe under a mask.

This is why I reminisce about the good ole days.

Friday Favorites

YAY!

Favorite # ONE

Amanda

Wednesday was Amanda’s birthday but since she had to go out of town on business, we gathered Sunday night to celebrate.  Amanda requested a birthday cake that is reminiscent of one my Mema Reid used to make.  I have never been able to make mine look like hers.

It is a yellow layer cake with chocolate icing.  The icing is fudgy like candy

There is nothing like presenting an ugly birthday cake to someone you love.

I don’t know why I can’t get this cake right!

Friday Favorites

Its Friday!

This week EVERY day has been as wonderful as Friday because I have been on vacation.  LB and I didn’t make plans to go anywhere in particular, but decided to take it a day at a time.

As I mentioned previously we went to EPCOT last Friday.  We spent the night then on Saturday, enjoyed a late breakfast and a shopping trip to Tanger Outlets in Daytona.  Once we made it back home, it was clear that a recovery day was in order.  So Sunday was a day spent doing nothing.

On Monday, late in the afternoon, we made spur of the moment plans to go to South Carolina.  Richard was on track to open a new restaurant on Tuesday, and LB thought it would be fun to surprise him by attending.

Lydia and Rory are the sweetest little girls that I’ve known since my own Stephanie and Amanda.  Before we left SC they wanted to spend a few minutes snuggling.  So we did.

I mentioned in an earlier post that LB and I had visited St. Augustine to see the Nights of Lights, but it was SO CROWDED, there was no getting into the historic district.

We decided to go back on a weeknight during our vacation, and that happened on Thursday.We had a great time and the city was beautiful, as always

~

Since we couldn’t get tickets to President Trump’s rally in Valdosta on Saturday night, we decided we would go to Fernandina to hear a band that LB follows.  So we went to Fernandina, checked into the Hampton Inn (which was very cute), walked around the town visiting shops and enjoying the Christmas displays, we had dinner at Pepper’s and then walked to the place were the Bluff Five Band was scheduled to play.  It was outdoors and it was just too cold.

So we went back to our cute hotel and watched the rally in Valdosta…

Epcot Adventure

At first it was going to be The 25th Annual 2020 Epcot International Food and Wine Festival that Stephanie and Amanda wanted us to attend.  So LB bought tickets to EPCOT for November 13th.

Then it was decided that we should instead attend the Taste of EPCOT International Festival of the Holidays on the Friday after Thanksgiving.  So LB changed our reservations and tickets.

On Friday morning, LB and I headed to Orlando to meet Stephanie and Amanda.

We met at the Pop Century Resort and took the new Skyliner to Epcot.  I am not a Disney park regular, like many in my family, so I left it up to my girls to show us the Disney ropes.  For starters, they suggested that I participate in the

and then led us to the World Showplace where we enjoyed some Festival Favorites and picked up our first cookie.

It was at the world showplace where we began our day of eating tiny servings of International dishes.

It was great.

Our next stop was the Yukon Holiday Kitchen at the Canada Pavilion where we picked up our

For some reason the girls did not want this cookie and asked for permission to swap it for two of another.  I haven’t tasted it yet, but I think it is kinda cute.

Stop number three was the Bavaria Holiday Kitchen at the Germany Pavilion where we collected our

Later that day, after enjoying a few of EPCOT’s attractions, we stopped to purchase our fifth Cookie Stroll cookie at the L’Chaim Holiday Kitchen [between the Morocco and France Pavilions]; the

LB doesn’t know it yet, but I’ve already eaten this cookie.  Yep… all by myself.

The L’Chaim Holiday Kitchen was the last cookie stroll stop and was also my favorite dining spot.  There was a tiny pastrami sandwich and potato latkes topped with smoked salmon. 

The prize cookie was the

Minnie Peppermint Cookie

at the Holiday Sweets and Treats, where Amanda got her favorite chocolate peppermint shake.TINY chocolate peppermint shake.

To house my expensive collectible cookies, I purchased this cutie collectible containerwith the help of Amanda’s season-ticket-holder-discount.

Our EPCOT Adventure was a fun day and I would definitely recommend the Taste of EPCOT International Festival of the Holidays event.
