Although it has been many months since the last, this is my monthly compilation of what’s up:

What’s Up Wednesday?

starting with

What we’re eating

“WE” are eating very light these days because Kim is on the Invisalign diet.  Having a mouthful of bothersome plastic which is so much trouble to remove and replace EVERY TIME I EAT, I have opted for less snacking.

Just for perspective, if you’re familiar with the intermittent fasting plan, this allows you to do all your eating within 8 hours of a 24 hours day.  The invisalign diet requires that all your eating be done in 2 hours.

What we’ve been up to

We returned home from Fall Vacation on Saturday.

Although he was standing under the kitchen table yelling at me when I came inside, Elvis was delighted! I’m sure Mama was delighted too since she has been “kitty sitting”.

What I’ve been working on

LB and I are redecorating [although things are currently on hold].

Next on our list is…

What I’m excited about

The Dining Room Redo.  Hopefully this is happening on Saturday!

What I’m dreading

With the exception of driving to my office every morning, nothing comes to mind 😕

What I’m watching/reading

The most recent movie LB and I watched was Toy Story 4.

It was this movie that inspired our Halloween costumes this year.  Unfortunately, I waited until the last minute and I could not find a Bo Peep costume ANYWHERE.

So I’ve embraced my 2nd choice….

What I’m wearing

The reveal is TOMORROW!

What I’m doing this weekend

Stephanie’s birthday is Friday and we will be having Frosted Animal Cookie Cake and Steak Fries.  Then the FL/GA game is Saturday.

MY BABY GIRLS!

What’s Up Wednesday

Although the month is at the halfway mark, it has been a long time since I’ve published a WUW post.  It way overdue!  Here goes…

What we’re eating

For the past two weekends LB and I have enjoyed fajitas at Salsas Mexican Restaurant.  We love the new location and the fun décor.

~

What I’m loving

My new bird feeder!Elvis loves it too!

~

What we’ve been up to

Sprucing up the back patio.  On Saturday, armed with a bucket of soapy water and a Swiffer, I washed the pool enclosure screens.

Then I gave Fergus, Sunny, and the other floats a good scrubbing. LB did a good deal of pressure washing and chemical balancing to get the pool ready for swimmers.

It took most of the day, but was well worth the time spent.

What I’ve been working on

My philosophy course [PHIL380].

It has been NOTHING BUT PHIL380 for the last 8 weeks.

My final assignment was submitted last Friday!

What I’m excited about

Finishing PHIL380!  Also

I got an A!

~

What I’m dreading

It is time for Elvis to have a checkup. 

I’m not looking forward to this because there is always drama involved.  I shared some of our experiences here and here.

~

What I’m watching/reading

Netflix has produced a series called Dead to Me.  LB and I committed our first Netflix binge last Friday, watching six of the newly released episodes.

Regarding what I’m reading, I just finished Bioethics by Gilbert Meilaender.

This was a course requirement, nevertheless, it is the most recent book I’ve read.

What I’m listening to

LB will often say “Alexa, play some music” to which she replies “playing your most played and favorite songs”

Cue Michael Bublé

I’m not sure if Michael Bublé is Alexa’s favorite or LB’s favorite, but apparently we listen to his music quite often.

What I’m wearing

What I’m doing this weekend

What AM I doing this weekend?

Last weekend was dedicated to Mother’s Day and involved baking a cake and going to the nail salon for a pedicure.  The seven weekends prior to that were dedicated to PHIL380.

LB has been very patient.

I should probably let him decide what I’m doing this weekend.

What I’m looking forward to next month

What I’m reminiscing about

Today is National Retro Day.

When I reminisce about the good ‘ol days I think about The Brady Bunch, The Bee Gees, Michael Jackson, and the mullet (haircut).

What I’m loving

I am loving my new dentist Dr. Jessica Proctor and dental hygienist BJ.

My tooth broke at the beginning of the month and it took a couple of trips to get it fixed.  When all was said and done, I had experienced very little discomfort and left the dentist’s office with a plan for the future… It’s a long story, suffice it to say that I’ll be getting braces – not merely for cosmetic purposes.

What we’ve been up to

LB decided that he was going to take a course in Project Management.  He suggested that I take one too so we could work on it together.

LB is cut out for Project Management.

Kim is not.

(But I’m hanging in there)

~

What I’ve been working on

In addition  to the Project Management course, I’ve been purging the house of items that no longer spark joy.

LOL!

No I’m not falling prey to the Konmari method, but I do have too much stuff.

If you think you might need any men’s/women’s clothes , shoes, small kitchen appliances, VHS tapes, books, or a four-piece set of vintage luggage [in excellent condition]…

What’s Up Wednesday

What’s Up

is a recap of everything that has been going on this month.

Because it is an immensely important topic, What’s up Wednesday begins with

What we’re eating

WE CAN’T STOP eating the Almond Roca that I made last Sunday.

We = Me

Almond Roca is a chocolate-covered, almond/butter toffee with a sprinkling of chopped almonds.

It looks like this:

It is made like this:

Almond Roca

  • Servings: 2 lbs
  • Time: 20 mins
  • Difficulty: easy
  • Print

Ingredients

  • 2 cups light brown sugar, packed
  • 2 cups (4 sticks) butter
  • 1 1/2 cups almonds, chopped
  • 2 cups chocolate chips
  • 1 tsp coconut oil

Directions

In a saucepan over medium heat, add brown sugar and salted butter.

Stir until sugar is dissolved and occasionally until mixture is bubbling.

When candy thermometer reaches 280° remove from heat and add half (3/4 cup) of the almonds to the mixture, stirring to combine.

Pour mixture into a rimmed, foil lined 18×13 baking sheet and let cool.

While toffee cools, add chocolate and oil into a pot set over low heat, stirring until melted through.

Use a rubber spatula to transfer melted chocolate evenly on top of toffee layer, taking care to smooth the surface.

Sprinkle remaining chopped almonds evenly over the warm chocolate layer.

Chill in the fridge

Once set, break into pieces and store in airtight container.

After reminding myself that I have quite a few great Christmas CDs, I put this in the car…

I am DOING five days away from the office!

LB’s birthday is next month!

I never got around to posting about his 2018 birthday and now I can’t remember what we did!

What We’re Eating This Week

I’m practicing low carb this week.

LB is enjoying dessert every night.

What I’m Reminiscing About

What I’m Loving

Well it must be my new yellow jacket because I have worn it 3 times this week.

What We’ve Been Up To

Mandatory Overtime for me and Hurricane Restoration Overtime for LB.  My overtime has been continual since July… needs of the business and all that.  It appears to be the new normal and may go on forever.

  LB thinks his will be wrapping up this week.

 What I’m Dreading

There is nothing dreadful on the horizon [that I am aware of] with the exception of going to work.

What I’m Working On

My attitude about going to work.

No seriously… why would I work on that?

I’m working on finishing up my Intro to Research class! This is the last week and a new one begins on Friday.

Three credits down… Fifteen to go!

What I’m Excited About

What I’m Reading

I have completed the Publication Manual of the American Psychological Association® (APA), 6th Edition and I am currently reading chapter 15 of the textbook Introduction to Research: Less Fright, More Insight: Designed Specifically for Ray Crawford, Ph.D. at Liberty University, 2nd Edition.

And getting smarter by the minute.

What I’m Watching/Listening To

not really watching, but glancing occasionally, because it is funny.

What I’m Wearing

Today I’m wearing red pants, floral top, and NEW YELLOW UTILITY JACKET from LOFT!

not the best picture (I was leaving for work and having a hard time showing happiness) but I LOVE my jacket.

What I’m Doing This Weekend

First and most important, I’m sleeping late on Saturday morning and Sunday morning.  On Sunday Afternoon LB and I will be attending a party for one of the members of his work group.

What I’m Looking Forward to Next Month

Next month brings two birthdays

Stephanie

my firstborn

and

Richard

my baby!

In addition there is an upcoming holiday (Thanksgiving), and several vacation days.

I’m especially looking forward to the vacation days.

I’ll probably need to start getting serious about Christmas shopping too!

What We’re Eating This Week

Monday I came home from work and began emptying the produce drawer.  I made dinners for LB that would be easy to heat up every night.  Stuffed bell peppers, sautéed chorizo with vegetables and rice, roasted Brussels sprouts and hamburger patties

He’ll have something tasty every night for the rest of the week.

 

What I’m Loving

Rory

Her little face is a ray of sunshine.

 

What We’ve Been Up To

Mostly work.

On a positive note, LB and I enjoyed a short trip to the Golden Isles last Saturday/Sunday and then caught up with the family on Sunday night.  That was very nice.

 

What I’m Dreading

Driving to work tomorrow.

I Dread This.

Every.

Day.

What I’m Working On

On August 27th I will be starting the first of six courses that will result in my attainment of a bachelor’s degree.

YAY!

What I began briefly after high school in 1984 and dabbled with for many years, is finally going to come to an exhilarating end.

There will be celebrations and possibly fireworks.

 

What I’m Excited About

Besides that degree?

I’m overwhelmingly excited about being off for four days in a row at the end of August.

What a great way to welcome September!

 

What I’m Watching/Reading

Yesterday I downloaded a sample [to my Kindle app] of Yuri Elkaim’s 5-day diet.  In this book he presents his 5-Day Food-Cycling Formula, “which sets your metabolism to lose up to 5 pounds a week” and he explains intermittent fasting.  I didn’t want to commit to an entire book if it might be boring.  Happily it seems like it will be an interesting read, plus I’ll be able to learn all about intermittent fasting.  And as good luck would have it, this book is a mere $9.99.  Seems like a steal to me, compared to similar online programs that can cost up to $200.

 

What I’m Listening To

I was enjoying listening to Vin Diesel talk trash to Samuel L. Jackson in the movie xXx, but LB changed the channel.

 

What I’m Wearing

I wore this today:

Chambray wrap top from LOFT, white Skinny jeans from Venus, and Circus by Sam Edelman sandals in golden caramel.

 

What I’m Doing This Weekend

I might be going to an AMC Theater to use the gift card my sister gave me.  She has invited me to see Mamma Mia.  I’m not certain that I’ll be able to sit still through an entire movie, but we’ll see.

 

What I’m Looking Forward to Next Month

September marks the start of my favorite season.  Although it won’t feel like fall here in Florida, it will begin to look like fall.  As the days get shorter, the sun’s path across the sky sinks lower to the horizon making the sky appear to be more clear and blue.

Or maybe it is the color of the leaves that sets off the blue sky.  I love it!

This past Saturday was not an average Saturday.

Saturday morning LB and I attended the HOME-GOING Service for the mother of LB’s good friend David.

David’s mother was 93 years old.

When we left I made the comment that I felt like I had

What I’m Watching/Reading

As I’ve mentioned before, there isn’t a TV show or series that I follow or feel compelled to watch.  However since it is among the programs that LB records, I will occasionally watch CBS Sunday Morning.  In last week’s episode the New York’s Times Best Seller’s list was revealed.  The President is Missing by Bill Clinton and James Patterson is currently and has been #1 for four weeks.  Reviews designate it to be a very fascinating read.  LB and I are both thinking about trying to fit this book into our schedules.

What I’m Listening To

At the moment I am hearing I’ve Got You Under My Skin by Frank Sinatra.

What I’m Wearing

Blue and white seem to be a favorite combination these days.

 

What I’m Doing This Weekend

As I mentioned previously, we are celebrating Lydia’s 3rd birthday is this Saturday.

Saturday evening plans are undecided.

Sunday plans will likely include a trip to the beach because the weather is predicted to be perfect.

 

What I’m Looking Forward to Next Month

Currently there is nothing exciting planned for August, but I’m sure LB will come up with something.
